Chicken Stock

Last night I roasted an organic free range chicken and instead of throwing away the carcass, I decided to make a chicken stock with it. I just put the left over bones into a large pot, filled it up with water until everything was covered and added, onion, carrots, herb salt, you can also add celery (I didn’t have) and then leave it to simmer for a few hours.  Decant into sealed freezer containers and then when you need it, you’ll have this golden deliciousness at hand.

I cooked a meal out of Real Meal Food Revolution for lunch today, it’s the Quick Trinchado on sautéed veg, amazing!! So tasty and the kids loved it too!! This is a recipe book about low carb, high fat and banting. I’ve joined a new banting group on Facebook here and I’m really enjoying the discussion. There’s a lovely quarterly magazine called Lose It, you can download it off Zinio, a mine of information and delicious recipes.

Cowl

Finally I’ve had a chance to sit down and knit on my new cowl design, I’ve called it the Moulin Rouge Cowl, named after the yarn itself. It’s been dyed by the very talented Carle‘ of Nurturing Fibres.

Send Healing Thoughts

Richard has been training for the Sani 2 Sea stage race since December last year. On Sunday he fell off his bike and has sprained his right knee. We’ve just come back from the chiropractor, she stuck 6 needles into his knee massaged it until the lymph started to move and the swelling has started to go down. He’s in a lot of pain and is really trying to recover for next weeks 3 day stage race. I’m hoping he will, he’s put in so many hours of effort and training. Please send a healing thought or two his way, thanks:)

We had a lovely weekend, hockey on Saturday and a braai with good old friends on Sat evening. We sat outside by a bonfire and enjoyed the cool Autumn air. On Sunday morning Richard had quite a bad fall while riding his mountain bike. We spent the afternoon in the ER, his knee was extremely swollen. He’s ok but very sore and has a stage race next week that he’s been training for for 6 months. I really hope he recovers in time for Sani.

Caiden and Kye have been raking leaves there are so many, as soon as the wind blows even slightly, a river of leaves slowly trickle down to the ground. Leaf piles are such fun to play in! My mom has been clearing out her old house and gave me this cat to put in the garden, Delilah spotted it and wasn’t too sure if it was real or not, it was so cute to watch.

Most of our indigenous plants are flowering at the moment, the bees and butterflies are everywhere in our garden again. Autumn is my favourite season of all…
