I have been trying to make healthy snacks and food for the past week, the kids love this (and so do I), carrots dipped in avo dip with herb salt and a tiny dash of sour cream, yum!

Dehydrated zucchini / courgettes, our new “chips”, I sliced these very thin, sprinkled some herb salt on them and placed them in the dehydrator for 6 hours on a low heat, 115 F , 45 deg C. If you don’t have a dehydrator, you can also dry out veggies in the oven on a low setting, these are SO crunchy and crispy, just like chips should be. I must confess, I love eating packet shop bought potato crisps and I know they aren’t good for me, so I thought if I could replace them with something healthy like veggie chips, that might work, we’ll see…

Today, I’m making beetroot and sweet potato chips with herb salt on them, can’t wait to try these, they are my favourite from the health store, now I’m making my own. Oh, by the way, my dehydrator is called an Excalibur, a wonderful machine.

We’ve had a few bird visitors in our garden, this is a very noisy Wood Hoepoe, they always arrive in groups, making exceptionally loud noises and dancing on the branches, amazing characters.

    Your dried crisps look great! I too need to try to eat more healthily. It is difficult as I have a VERY fussy eater who does not like very many different foods. But I will try.

    And your kitchen looks just like mine! Unfortunately, that is a regular state of affairs in my kitchen….

    Great post. I think I’ll try dehydrating some veggies in my oven, they look yummy. How do you make your herb salt? Is it as easy as it sounds – salt and herbs?

      Hi Mel,
      I buy the A.Vogel herb salt from my health shop down the road, the one I love is called Tocamare, too lovely!

    You have the exact dehydrator I want, do you love it? I am always so nervous about buying appliances, wondering if they will actually do what I want them to.
    I’m so glad you are eating healthy, it really does make such a difference in how you feel.

    Oh I just posted about a couple of healthy make ahead lunch recipes. I signed up for an organic box for a couple of months and their beetroot chips were to die for! I have often wondered if I need a dehydrator – I know I certainly want one!

    Lots of great ideas, thanks!! Somehow, this summer, I got away from my normally pretty-healthy eating. I admit, there have been store bought potato chips and cookies!! in the house. 🙁

    Your snack foods sound so good. I have only recently realized that tossing some avocado into a fruit smoothie is really delicious. I’m also very fond of avocado and grapefruit with vinaigrette, but that may be a flavor combination that appeals to some but not others. I love seeing your local birds, which, of course, we don’t have in our neighborhood. The owl, too, is adorable. The ear tufts really tickle me.

    I am going to try making some chips with the yellow zucchinis that I just bought! I have been making kale chips and seed crackers as well that you can make in the dehydrator if you want the recipes? I have an American Harvest round dehydrator, it’s ok but an Excallibor is on my list of wants!
    I find if I chop up the veggies and fruits and put them in jars in the fridge we grab them as snack foods. The only way I can stop eating crisps is if I don’t buy them but they are one of my weaknesses!!
